Sadly, the programmers either didn't have time or space to make a new model, so they just kept him hidden and put a camera in the perspective of what SEEMS to be Kafei's adult form during the wedding sequence. The same carries over to the 3DS version, so what he's supposed to look like as an adult is up to everyone.
